When the BBQ heat is high, reach for something fresh. These summery skewers pairribboned courgettes with creamy zesty Ticklemore — a refreshing goat’s cheese with a lemony lift. Quick to assemble and striking on the plate, they’re ideal as a vegetarian main or a side that’s sure to disappear fast. Serve with nice chilled glass or of rose.

- 2 courgettes thinly sliced lengthwise, so that they can be bent.
- 100 g Ticklemore cubed.
- Olive oil.
- salt & pepper.
- lemon zest.
- Couple of sprigs of fresh thyme, (optional)
- 1 tsp honey, (optional)
Thinly slice your courgettes and marinade in olive oil, lemon juice, salt and pepper for 10 minutes.
Roll courgette strips around Ticklemore cubes and skewer.
Grill for 3–4 mins per side until lightly charred.
Serve with lemon zest fresh thyme and a drzzle of honey
