Ingredients
  

  • 200g Ticklemore Goat’s Cheese, cut into 8 thick wedges
  • 6–8 sheets filo pastry
  • 40g 40g unsalted butter, melted (or light olive oil)
  • 2 tbsp Sharpham Hot Honey, plus extra for drizzling
  • Cracked black pepper

Instructions
 

Prep the Cheese

  • Slice the Ticklemore into thick wedges — around 2–3 cm wide. You want generous pieces so the parcels feel creamy and substantial.

Prepare the Filo

  • Lay one sheet of filo on a board and brush lightly with melted butter.
  • Fold lengthways into a long strip (8–10 cm wide).
  • If your filo is very thin, double-layer it.

Add the Filling

  • Place a Ticklemore wedge at the bottom of the strip.
  • Drizzle with ½ tsp Sharpham Hot Honey.
  • Scatter thyme leaves (optional)
  • Season lightly.

Fold into Triangles

  • Fold the bottom corner over the cheese to form a triangle.
  • Continue folding upwards, keeping the triangle shape (like a samosa).
  • Brush the outside with butter to seal.
  • Repeat with remaining parcels.

Bake

  • Bake at 180°C (fan or airfryer) for 12–15 minutes, until crisp, golden, and blistered.

Finish

  • Drizzle with warm hot honey and serve immediately
