ABOUT THE CHEESE LAYERS
Top Tier: SHARPHAM BRIE HEART. It was handcrafted in South Devon by us at Sharpham Dairy. Sharpham was the first to make Brie-style cheese in the UK, and Sharpham Brie is made using the same recipe today as it was when it was first made in 1981. Handmade in Devon using pasteurised cow’s milk, the curds are hand ladled into small heart-shaped moulds, brined, then left to mature to create a white bloomy rind. The beautiful buttercup yellow centre comes from cows grazing on the luscious South Devon pastures. Sharpham Brie is a mould-ripened cheese that is firm, rich, and creamy when young, softening with mushroomy notes and a chicory finish with age.
Seventh Tier: SHARPHAM RUSTIC CHIVE & GARLIC Handcrafted in South Devon by us a Sharpham Dairy Sharpham Rustic Chive & Garlic is a semi-hard cheese made with pasteurised cow’s milk with the addition of a blend of chives and garlic. The curd and herby mixture is packed into moulds to get the unique Rustic shape. The curd is drained for 48 hours before being brined and left to mature to create a natural white bloomy rind, with a golden yellow centre which has flecks of green throughout.
Sixth Tier: SHARPHAM CAMEMBERT. We handcrafted it in South Devon at Sharpham Dairy. Developed by Greg and Peter to celebrate 40 years of cheese making at Sharpham, our Camembert combines Normand methods with South Devon terroir to create its own character. Sharpham Camembert is a moist, soft, creamy, surface-ripened cow’s milk cheese, it is typically made in individual rounds which makes it perfect for baking. Camembert becomes creamy, oozing, and perfect for dipping when heated. Sharpham Camembert is a soft mould-ripened cheese with a smooth, creamy body and slight grassy notes. It develops a complex earthiness with age.
Fifth Tier: SHARPHAM SAVOUR. It was handcrafted in South Devon by us at Sharpham Dairy. Sharpham Savour is based on a young French Savoie-style cheese. It was made to celebrate 50 years of the area being designated an Area of Outstanding Natural Beauty. It’s made from a mixture of 75% cow’s milk and 25% goats’ milk which produces a sweet, mellow flavour. The curds are washed before moulding creating a smooth texture. On maturing when young it has a soft and pliable texture, maturing to almost alpine style with age. Sharpham Savour is a washed curd cheese with a smooth texture. It has a sweet creaminess which develops a slight tang with age.
Fourth Tier: SHARPHAM CREMET Cremet is a decadent, soft, mould-ripened goat’s cheese enriched with cow’s double cream. It is delicate to make and there is nothing like this produced in the UK. It has a subtle, fresh, creamy flavour and mousse-like texture when young, deepening to a full, rich flavour with earthy undertones when ripe. Sharpham Cremet combines both goat’s milk and cow’s double cream. You can taste them both in this rich creamy cheese. The centre is pure white, and the soft rind has a creamy bloom.
Third Tier: SHARPHAM TICKLEMORE Sharpham Ticklemore was the brainchild of Robin Condon. Named after the street in Totnes, home of the famous cheese shop. Ticklemore is a semi-hard goat’s cheese handmade from fresh pasteurised goat’s milk. Its distinctive shape comes from being moulded in a colander. This helps it develop a wonderful white bloomy rind with a bright white chalky centre. Sharpham Ticklemore is a semi-hard goat’s cheese that has a light and gently lemony flavour with herbaceous notes, a crumbly texture, and a white bloomy mould to the exterior.

HOW IT’S DELIVERED
We advise you to get the delivery a couple of days before the wedding and store it in the fridge till then. We will leave instructions on how to stack your cheese for your special day. Each layer is numbered for ease of assembly.
