- 1 bunch fresh asparagus (approx. 250g), trimmed (approx. 250g), trimmed
- 1 tbsp olive oil
- 1 lemon
- 120 g Washbourne Cheese
- Sea salt and black pepper to taste

- Wash the asparagus and trim the woody ends by snapping or cutting off the base of each spear.
- Place a griddle pan over medium-high heat. Allow it to get hot — you want to see it smoking slightly before adding the asparagus.
- Toss the asparagus spears with olive oil in a bowl, ensuring they are evenly coated.
- Lay the asparagus spears in a single layer on the hot griddle. Cook for 2–3 minutes on each side until lightly charred and tender but still with some bite.
