    🌶️ Getting our chilli on at South Devon Chilli Farm. Last week we were invited to explore this unique chilli growing farm not far from our cheese dairy, to celebrate the launch of their new Manzanilla Tropical Chilli Jam. @southdevonchillifarm supplies the smoked chillies for our new Rustic with Smoked Chilli, so it was fascinating to see where our chilli cheese has its roots (watch this space for an upcoming giveaway!) Amrit and Jenny, owners of South Devon Chilli Farm, and their small team, specialise in growing a wide range of different chilli types. They plant, propagate, grow and harvest over 100 varieties. You can buy seeds, chilli plants and they also make some of the most delicious chutneys and sauces around. And they have an RHS Chelsea Gold Medal to boot! Their approach is to work in harmony with the natural environment which means no use of pesticides, they use 100% renewable energy thanks to solar panels, and more. Check out their website for a full run down of their impressive sustainable ethos. Amrit showed a group of chilli lovers around the fascinating research tunnel; the growing tunnels which range across scenic Devon slopes, and the surprisingly bijou kitchen where their chef creates all their chilli-based products… and we arrived back at the shop hungry for snacks… mmm our rich and creamy Elmhirst paired with the new Manzanilla Tropical Chilli Jam hit the spot. What a combo! The new Tropical Chilli Jam has the bright tang of pineapple, a hint of lemongrass, a zing of ginger and the heat of Devon chillies. We were really wowed by the flavours, which cut through the richness of the cheese a treat. Thanks for the tour and for sharing your passion for chillies Amrit!

It’s flying out of the dairy, so you’ll soon see it popping up on a cheese counter near you. So what’s it all about? Sharpham Smoked Chilli Rustic is our classic semi-hard Rustic - creamy, lactic, and rich - taken to new heights with a warming blend of smoked chillies. We fold in flakes of fruity Ancho and smoky Chipotle, along with a spicy Numex mix from South Devon Chilli Farm, chosen for their unique qualities: deep, smoky heat rather than a fiery burn. The result is a cheese that’s complex, gently spicy, and beautifully balanced. Speckled throughout with ruby red chilli flakes, this is a cheese that delivers subtle warmth and a lingering finish, never overpowering, always moreish. Perfect as a tasty talking point on your summer cheeseboard, melted into chilli-stuffed quesadillas, slicing into burgers, or served with a glass of dark beer and a hunk of crusty bread.     Last week we hosted another of our ‘money can’t usually buy’ Crowdfunder rewards… A ‘Cheesy Tour of London’ with author and cheese expert, Steve Parker. Steve guided a group of cheese lovers around some of the best cheesemongers in London, with an opportunity to sample and compare many of the most notable and delicious cheese made in Britain today. Greg, and Head Cheesemaker Pete, joined them on the tour to meet the affineurs, getting a behind the scenes insight into the art of aging and maturing of cheese. It was a fascinating day filled with cheesy information, history and facts, with plenty of tasting en route, lunch and cheesy treats to take home.     PICNIC RECIPE! July is #PicnicMonth and these cheesy savoury flapjacks - which use Rustic with Chives & Garlic - are perfect to pack into tub to feed hungry hoards of all ages. They are seriously good. Perfect for a picnic or a packed lunch to keep you fuelled-up for the afternoon. And our flavour-packed Rustic is a perfect addition. ◽️You will need: 100g butter 200g porridge oats 2 carrots, grated 1 tbsp milled flaxseed 1 tbsp chia seeds 150-200g strong cheese, grated. We used our Rustic Chive & Garlic and a little Quickes Cheddar. 3 eggs, beaten. Small bunch of chives, snipped. 50g mixed seeds and extra to sprinkle. We used a mix of pumpkin, sunflower and sesame (and might use more in the mix next time). Pinch of chilli flakes to taste. We’d add more next time! Salt and pepper. ◽️How to make: 🔸Heat oven to 180°. 🔸Melt butter. 🔸Stir all ingredients in one at a time and leave to cool. 🔸Add beaten eggs and stir well. Season generously. 🔸Tip into lined tin approx. 20cm x 20cm. 🔸Press down with the back of a spoon. 🔸Scatter over extra mixed seeds. 🔸Bake for 25-35 mins until golden. 🔸Leave to cool in the tin before cutting into bars. 🔸Keep in an airtight box.     We’re shining a spotlight on Savour today as it’s such a beautiful day down here in our South Devon home. Couldn’t you just eat a hunk of Savour? It’s a creamy, washed rind, mixed-milk cheese, made with 3/4 cow and 1/4 goat’s milk, and based on a young French Savoie-style cheese. Combining the two milks produces a sweet, mellow flavour with a slight tang. Washing the curds produces a smooth and supple texture. Savour was launched in 2010 to celebrate the 50th Anniversary of the South Devon Area of Outstanding Natural Beauty, now called the South Devon National Landscape. We’re lucky to have this area right on our doorstep! It’s one of 46 protected landscapes in the UK, recognised for its rugged coastline, sandy beaches, secret estuaries, patchwork countryside and historic towns and villages.     Creamy, dreamy, gooey soft cheese and strawberries anyone? ⁣ To celebrate Wimbledon, we served up a love-match of our rich, triple cream Elmhirst and sweet, juicy strawberries - a perfect pairing on centre court.⁣.. and down here in our Devon dairy. ⁣ And yes, that’s our very own Henman Hill in the background… not much tennis action up there, but the view? Unbeatable. ………………………………………………………………………. Elmhirst is a multi award winning mould ripened soft cheese, clean and fresh when young and rich and gooey when ripe. It’s pure dairy opulence. Like a Normandy Vignotte, double cream is added to rich Jersey milk to create a cheese which is unusual in the UK.

    PATTERN | All our cheeses are shaped using molds that leave distinctive surface patterns. While these patterns are hidden beneath the furry, white rinds of our soft cheeses, they remain visible on our harder cheeses, giving each a unique appearance. Take our Ticklemore Goat’s Cheese… its iconic ‘flying saucer’ shape and lined surface come from being hand molded in a flat-bottomed plastic colander, giving it a memorable look but also reflecting the craft and care which goes into every cheese. Next time you’re at your local cheese counter, look out for these subtle patterns.
