Sharpham Elmhirst
Handmade with Jersey Cow's milk & double cream
Named after the family that contributed so much to the area, Elmhirst is pure dairy opulence. Similar to a Vignotte, double cream is added to our Jersey milk, resulting in mould-ripened triple cream cheese that is rich and mousse-like when young (2-3 weeks old) and develops into a full-bodied, decadent, and gooey experience when mature (4-6 weeks).
Great Taste Two-Star Cheese. Judges commented:
"This cheese has a very satisfying aroma, combining the rind and the farmyard notes. There is a deep creaminess both in the depth of flavour and texture. An almost blue cheese, the savoury note balances perfectly with the rich cream. There is a complexity to this that leads through several flavours from butter to double cream."

Why does the Sharpham Elmhisrt have a different texture from the Sharpham Brie?
Sharpham Elmhisrt is made from Jersey cow's milk and Cow's double cream; the addition of this creates a more mousse-like texture.
Why is the inside of the cheese so yellow?
Sharpham cheese is made from grass-grazed Jersey cows' milk, so the hue of the milk is yellow and golden, leading to the buttercup yellow hue of the paste.
What is the best way to serve Sharpham Elmhirst?
Let it sit at room temperature for at least 30 minutes so the centre softens and the flavours open up. If you are not planning on eating the whole cheese, consider portioning it before bringing it to room temperature
Why does my cheese sometimes have a stronger aroma?
Soft cheeses naturally become more aromatic as they ripen. This is normal and part of their character.
Is the rind edible?
Yes — the bloomy white rind is completely edible and adds depth and earthiness to the flavour.
