Inspired by Maurice Ash, this Brie follows a Coulommier‑style recipe unique to Sharpham. It has been hand‑crafted on the estate since 1981, making it one of the first British cheeses of its kind. The beautiful buttercup yellow comes from using fresh cow’s milk from our Jersey herd, which grazes on the luscious Dartmoor pastures. This mould‑ripened cheese begins firm, rich and creamy, gradually softening as it matures, revealing mushroomy notes and a gentle chicory finish.

PAIRING SUGGESTIONS: 

Sharpham brie is beautiful when baked and is pivotal to a good cheese board—pairing exceptionally well with our Ploughman’s Ale Chutney. The chutney complements the richness and creaminess of the brie, as well as its savoury, aged flavour. If ale isn’t your thing, then you could try the Sharpham Caramelised Fig & Sandridge Barton Pinot Noir Chutney  The ripe figs in this help cut through the fatty richness of the creamy brie. Our favourite drinks partner is the light and fruity Sharpham Pinot Noir.

How to Bake the Small Square Sharpham Brie

Sharpham Brie’s rich Jersey milk and soft, mould‑ripened rind make it exceptional for baking. The small square (250g) size is perfect for sharing — turning irresistibly gooey in the centre while keeping its delicate structure.

 Step‑by‑Step Baking Guide

1. Preheat your oven
Set your oven to 180°C (fan).
Remove the Brie from the fridge so it can warm slightly while the oven heats.

2. Prepare the cheese

  • Remove all packaging
  • Place the Brie into a small ovenproof dish
  • Score the top in a shallow criss‑cross pattern
    This helps the heat reach the centre and encourages that beautiful molten texture.

3. Add flavour (optional but highly recommended)
Try one of these simple toppings:

  • A spoonful of Sharpham Chutneys.
  • A drizzle of honey with cracked black pepper
  • Fresh thyme or rosemary
  • Sliced garlic for a savoury kick
  • Caramelised fig chutney for sweetness and depth

4. Bake
Bake for 15–18 minutes, until the centre feels soft when gently pressed.
The small square Brie melts quickly, so keep an eye on it for the perfect ooze.

5. Serve immediately
Bring straight to the table and enjoy with:

  • Warm baguette or crusty bread
  • Apple or pear slices
