Dartmoor 75 begins with our own herds’ exceptionally creamy Jersey cow’s milk, then incorporates Swiss cultures that bring a gentle sweetness and a rounded, alpine warmth.
We wash the curds to create a smooth, pliable texture, then age the cheese for 75 days or more at a slightly warmer temperature than our usual ageing rooms. This careful shift in environment encourages a deeper, more expressive flavour to develop — one that is subtly tangy, beautifully balanced, and, as we like to say, deliciously moorish.

Dartmoor 75 is available in two sizes: a large deli cheese and a wedge of this cheese, perfect for celebration cheesecakes, cheeseboards, and gifting.
Whole cheese – approximately 1.8kg 17 cm diameter x 8cm high
Wedge- 225g
Dartmoor 75’s smooth, supple texture and mellow alpine sweetness make it a wonderfully versatile pairing cheese. Alongside a crisp, fruity white such as Chardonnay or Riesling, it shines with Sharpham Caramelised Fig & Sandridge Barton Pinot Noir Chutney — the ripe figs echo the cheese’s gentle sweetness while the Pinot Noir adds a subtle depth. For something a little different, try it with a light, malt‑forward Devon ale or even a stone‑fruit; soft peach and apricot notes complement the cheese’s rounded, warm finish beautifully.
For best results, store Dartmoor 75 in the fridge at a temperature 0-5 °C
Bring to room temperature just before serving to allow its buttery, grassy notes to fully develop.
The washed-curd process of Dartmoor 75 means it retains more moisture, making it a more pliable cheese, which in turn creates a phenomenal melting cheese! Try melting it over a bed of warm potatoes and onions—similar to a traditional Raclette style and then add some Sharpham capicollo and a few cornichons, and you have a simple but delicious dish.Â
